Vegan Bakes

In collaboration with the Glasgow University Sustainable Students, this week's challenge was 'Vegan Bakes' -- it was Katrin's Turtle Cookies that came out on top! Here are a few of this week's bakes...




Jennifer’s Vegan Choc Chip Caramel Cookies





Ingredients

  • 135g flour

  • 3 tbsp cornstarch

  • 1 1/2 tsp baking powder

  • Pinch of salt

  • 1/3 cup & 2 tbsp vegan butter

  • 1/2 cup brown sugar

  • 2 tbsp sugar

  • 1 tsp vanilla

  • 2 tbsp almond milk

  • 3/4 cup chocolate chips/chunks

  • Vegan Caramel Chocolate


Method

  1. Preheat oven to 200˚C. Line a baking tray with parchment paper.

  2. Combine the flour, cornstarch, baking powder and salt in a bowl.

  3. In a separate (larger) bowl, cream the sugars, butter, vanilla and almond milk.

  4. Add the dry ingredients into wet ingredients and mix together until fully combined.

  5. Now, fold in the vegan chocolate chips/chunks.

  6. Shape the mixture into discs and place them spaced out onto the lined baking tray.

  7. Bake at 200˚C for 13-15 minutes.

  8. Squish a block of the vegan caramel chocolate into the tops of each cookie while they’re fresh out of the oven.

  9. Wait for them to cool and enjoy!





Kavita’s Vegan Pumpkin Choc Chip Cookies



Ingredients


Method

  1. Preheat oven to 177˚C.

  2. In a bowl, add softened vegan butter and both sugars. Beat with a mixer (stand or hand) until light and creamy about 2 -3 mins.

  3. Add vanilla extract and pumpkin puree and beat them until combined (about 15 – 20 seconds).

  4. To the same bowl, add the flour, baking soda, salt, cinnamon, ginger, nutmeg and cloves and mix until combined.

  5. Add chocolate chips and use a spatula to fold the chips in.

  6. Use a cookie scoop to make 12 cookies and place on a baking sheet.

  7. Bake the cookies for 10 – 12 mins.

  8. Remove from oven and let rest about 15 – 20 mins to set.








Felix's Vegan Chococolate Banana Cake





Ingredients

  • 1 banana (mashed)

  • 300ml oat milk

  • 275g flour

  • 100g sugar

  • 80g cocoa powder

  • 150ml veg oil



Method

  1. Combine ingredients in a bowl and pour into loaf tin.

  2. Bake at 190˚C for 35 minutes.

  3. Leave to cool before tipping out of the tin.
